Knife care & Instructions
ATTENTION! The knife in this box is very sharp and should be used with serious care and respect.
Knife and Scissor Care: To keep your knives and scissors performing their best, it is recommended that they always be hand washed using a sponge and mild liquid soap with warm water, drying thoroughly after each use.
A dishwasher is not recommended.
Stain Removal: To remove any stain on the blade, simply use a little Comet® or Bar Keepers Friend® on a sponge with warm water. Never use Scotch-Brite or a Brillo pad, as these will scratch and dull the blade.
Cutting Surfaces: Never use a glass cutting board, and never use a stainless steel or granite counter with a knife. These types of cutting surfaces can dull a knife edge quickly, even a great one like this. If the edge becomes worn have an expert sharpener re-grind a new edge on the knife. It is recommended to use wood, plastic or bamboo cutting boards.
Honing: It is recommended to use a honing rod to keep your edge straight and in alignment. A honing rod does not sharpen a knife, it simply straightens the small burrs on the edge.
Sharpening: When it comes time to sharpen your knife we recommend using our FASTEDGE Knife Sharpener or Our Diamond Sharpening steel.
How to Use a Honing Steel & a Diamond Sharpening Steel:
1) Lightly sweep knife edge diagonally from heel to tip on 18-20 degree angle, 3-4
times a side. Always do the same number of sweeps on each side of the blade, as this will help keep your edge straight. End with 1 sweep per side. Try the knife! If it’s still not cutting repeat the hone step. If you still have a dull edge that won’t cut, it’s time to sharpen your knife.
2) After using a hone or diamond
sharpener clean it with dish soap once every 2-3 uses, dry and store it in a block or drawer. This keeps the hone or diamond sharpener free from any fine knife particles that can decrease the performance of the steel.
These tips will help you to extend the life of your new cutlery and give you the best performance.

Mantenimiento del cuchillo e instrucciones
CUIDADO! El cuchillo en esta caja es muy afilado y debe ser usado con mucho cuidado y respeto.
Mantenimiento de Cuchillo y Tijeras: para mantener sus cuchillos y tijeras en buen estado, se recomienda lavarlos siempre a mano usando una esponja y detergente suave con agua tibia, secándolos completamente después de cada uso. No se recomienda lavarlos en lavavajillas.
Eliminación de manchas: Para limpiar cualquier mancha en la hoja, simplemente use un poco de Comet® o Bar Keepers Friend® en una esponja con agua tibia. Nunca use Scotch-Brite® o Brillo Pad® porque rayarán y desafilarán la hoja.
Superficies de corte: Nunca use una tabla de cortar de vidrio, ni tampoco use el cuchillo en una superficie de acero inoxidable o granito. Estos tipos de superficies pueden desafilar un cuchillo rápidamente, incluso uno de tanta calidad como este. Si el filo se desgasta, use los servicios de un experto afilador de cuchillos para rehacer el filo. Se recomienda usar tablas de cortar de madera, plástico o bambú.

Cómo usar una Chaira y un Afilador de Diamante:
1) Delicadamente, deslice el filo del cuchillo diagonalmente en toda su extensión en un ángulo de 18-20 grados, 3-4 veces por cada lado. Repita siempre el mismo número de pases por cada lado de la hoja para mantener su filo uniforme. Termine con un pase por cada lado. ¡Pruebe el cuchillo! Si todavía no corta bien, repita el rectificado. Si la hoja continúa desafilada y no corta adecuadamente, es hora de afilar su cuchillo.
2) Después de usar una chaira o un afilador de diamante, límpielos con detergente de vajillas cada 2-3 usos, séquelos y guárdelos en un taco de cuchillos o una gaveta. Esto mantiene la chaira o afilador de diamante limpios de cualquier partícula metálica fina que podría mermar su rendimiento.
