In het OSI model voegt elke laag een stukje informatie toe (header) aan de gebruikersdata van de verzendende kant, die er vervolgens aan de ontvangende kant weer door de corresponderende laag wordt afgepeld.

This actually describes a networking packet conversion process, by which some data added on the sending end, ....which then subsequently is removed at the other, receiving, end (in the corresponding layer).

You could translate it as "peeling off", but I think removed is better. And while it is the "header" that's removed, the text does not mention it. Should be translated in my opeinion as data.

agree Ron Willems : yes, peel off (with two e's): as in peeling of the skins of an onion; the layer that was added last, gets removed first. that's why peeling off is a tad more accurate/exact than removing imo.

removing the header

When the DBs are transferred, the packet data is restored at the data transfer destination only by synthesizing the transferred DBs and removing the header.
