From a description of a Neapolitan shirt makers'. I'm struggling with all three terms travetti, mouche and cannoletto though I've seen the former untranslated so may leave it that way.
Oltre al bespoke vero e proprio, questo piccolo laboratorio artigiano crea anche camicie pronte in taglia per Maurizio Marinella con i canonici otto passaggi a mano: giromanica, asola, spalla, bottone, collo, travetti, mouche e cannoletto.
Il fianco è ribattuto “all’inglese”, la manica attaccata a fianco chiuso e le cuciture a macchina presentano ben 9 punti per centimetro.

Although I found cannoletto on a site about policemen's uniforms in Naples obvioulsy referring to pleats on pockets, I think in the case above cannoletto coperto can only mean a covered button placket, hence a fly front, the distinguishing mark of very formal dress shirts

maybe you should stick to a more generic "button placket" - there are three types, basically- placket front, french front and fly front

I think it is some sort of vertical pleated structure, but whether it refers to the button placket on the front or a pleat on the back, I don't know.
