I don’t translate any of these subject matters. I translate mostly EU affairs and IATE + Eur-Lex are excellent sources. Anyway, I have a lot of dictionaries (for a good while I couldn’t enter a bookstore without buying a new dictionary) that sit proudly on the shelf near my desk. Like Teresa, I don't translate in those areas either.
My expertise areas are legal, medical and automotive, as well as marketing and tourism.
I already use paper and online dictionaries, as well as other useful resources, but... probably, I would welcome a dictionary specifically focused on all idiomatic expressions known in my language pairs.

I would love a dictionary that covers the performing arts. For instance, there are terms in theater, music, and dance that were adopted at specific intervals in specific languages and need not be translated.
Also, I think having a dictionary that captures popular trends and their accompanying colloquial phrases. Popular trends tend to have short lives and may not be captured adequately through social media posts alone. This would require more regular updates, to capture as much as ... When I was doing mainly automotive-related translations, I would have loved to have had Bosch's comprehensive in-house automotive dictionary which was used to produce their English-language Automotive Handbook. They published a couple of editions of Fachwörterbuch Kraftfahrzeugtechnik, but these volumes were at best rudimentary.
They briefly issued a bilingual CD of the Automotive Handbook which was useful, but it no longer ran on Windows 7, if I recall correctly. | | |

I am actually really fine using online dictionaries/platforms such as dict.cc or linguee.com and I haven't used an honest-to-god printed dictionary in over 10 years, but I would actually go for a corporate language one, especially if it comes with useful translations of empty corporate buzzwords and phrases (if there can even be such a thing). | | |
It makes me laugh, the idea of wanting dictionaries in specific fields.
There aren’t even any decent general dictionaries in two of my languages, and why would a pro translator need a dictionary anyway? | |

A dictionary of farm and forestry equipment would be useful, but I doubt if I would really buy one.
I often have texts involving tractors and their accessories and I usually manage to find what I want.
This week I had one on forestry equipment and that was more complicated, requiring a lot of googling.
A nice reliable online glossary would suffice. | | |
