Definition / notes:Pasteurized milk is milk that has been exposed to high temperatures to reduce the number of microorganisms in order to extend milk's refrigerated shelf-life. Pasteurization typically uses temperatures below boiling (while sterilization uses temperatures above boiling). Pasteurization kills pathogens which cause disease. Not all pathogens are removed during the pasteurization process, so pasteurized milk is not 100% sterile.
