n. [ah-PELL-ah-see-ON daw-ree-ZHEEN con-trow-LEE] (noun) French for "regulated place-name," Appellation d'Origine Contrôlée is the system used by the French government to identify the country's wine regions and regulate winemaking standards—alcohol content, grape varietal, growing methods, etc. The label on a bottle of Bordeaux, for example, will say "Appellation Bordeaux Contrôlée or some variation thereof. The AOC was established in the 1930s to help guarantee the quality of French wine and to prevent fraudulent labeling. It is the highest level of France's four-tier system of classifying the quality of wines, the lowest being Vin de Table (table wine). As a general rule, the more specific the origin, the higher the standard (and the price). The Italian equivalent of AOC is DOC (Denominazione di Origine Controllata), the Canadian version is VQA (Vintners' Quality Alliance), and so on.
Cabernet Franc
n. [CAB-bear-nay FRAWN] Cabernet Franc is a close relative of Cabernet Sauvignon and has many similar characteristics, though it tends to be lighter in color and less tannic. It's grown extensively in Bordeaux and the Loire Valley, where it produces a fine, silky wine on its own (Chinon), but the majority of Cabernet Franc is blended with Cabernet Sauvignon and Merlot to produce Bordeaux wines. In the Médoc region of Bordeaux, for example, it typically accounts for 15% of the final blend. Wines from Cabernet Franc grapes are generally medium-full to full-bodied, extremely perfumed, and medium-high in alcohol and acidity. Aromas and bouquet tend toward the herbaceous notes found in underripe Cabernet Sauvignon, as well as slight tobacco and cedarwood. The flavors of Cabernet Franc are typically black currant, cassis, plumbs, strawberry, and a lingering finish of blackberries. The varietal has found some success outside of France,
particularly in Italy, Eastern Europe, Australia, New Zealand, Argentina, New York, and the Pacific Northwest. Cabernet Franc has recently become a popular varietal in Napa and Sonoma for both blending (à la Meritage reds) and single varietal bottling. Recommended food pairings include salmon, beef, roast chicken, potatoes with fresh herbs, grilled portabella mushrooms, and hard cheeses.
Maceration
n. A winemaking term, "maceration" is the period in the fermentation process during which the grape juice of red wines is in contact with its skins and seeds. Essentially it's just a fancy word for soaking red wine in its own solids. The purpose is to let the wine's natural alcohol act as a solvent to leach out color, tannin, and aroma from the grape skins. Maceration usually takes place in huge sealed tanks, and the length of the process varies with the type or style of the wine being made, the temperature during fermentation, and the condition of the grapes. When maceration continues beyond the fermentation process, which is done to intensify a wine's color and aroma and to soften any harsh tannins, it typically lasts about 30 days; then it is called extended maceration.
Madeira
n. Madeira is both a type of fortified wine and a subtropical island off the coast of North Africa where Madeira is made. Madeira starts out as a white wine, and after being heated for a minimum of three months in estufas (heating rooms), it takes on an amber color and a uniquely tangy, burnt-caramel flavor. Why is it heated? Well, back in the 17th century, people discovered that wine made in Madeira actually improved as it sat in the sweltering cargo holds of ships that crossed the equator. Ever since, wine from Madeira has been heated in tanks at more than 100 degrees Fahrenheit to allow the sugars to caramelize. The result is an indestructible high-alcohol wine that will last well beyond your lifetime. Standard blends of Madeira are made mainly from the local grape varietal Tinta Negra Mole, whereas higher quality "reserve" and "vintage" Madeiras tend to be made from one of the four noble grapes traditionally used to make Madeiras—Sercial, Verdelho, Bual, and Malmsey (listed in ascending order of sweetness). All four of these noble grapes were destroyed by phylloxera at the end of the 19th century and are slowly being replanted on the island at considerable expense. Low-grade Madeira is mostly used for cooking, but the good stuff—pre-phylloxera vintages dating from 1920 back to 1795—is prized by collectors and fetches up to $300 a bottle. FYI, although the island of Madeira is a province of Portugal, the British have run its wine trade for centuries.
In the area of manufacturing, lasers are used for drilling, cutting, joining, hardening, surface modification and micromachining. The development of new laser sources, advanced laser optics and control systems offer new opportunities for lasers particularly in modifying surfaces of polymers. For example, the compact and energy efficient diode and fiber lasers enable higher process efficiencies and are relatively easy to integrate into manufacturing lines. New types of beam-forming optics and beam-monitoring systems allow the process to be controlled and conducted with high precision and accuracy, which are essential for many medical applications.
DNA microarrays
By focusing on genetic determinants of drug responses at the human genome level, pharmacogenomics plays an important role in prescribing safer and more-effective individually tailored drugs. DNA microarrays have shown great promise in clinical medicine by paving the way toward such effective individualized drug regimens. Microarray technologies and proteomics are instrumental in predicting drug sensitivity and potential side effects by studying the cellular pathways through gene expression profiles. Such information is changing the understanding of how genetics influences disease development and drug response, and contributing to the discovery of new treatments. Prospective genotyping of patients for various genes to determine drug targets, drug metabolism, and disease pathways is the first step toward individualized therapy, by matching the patient’s unique genetic makeup with an optimally effective drug.

Walk the Danforth Avenue strip known as Greektown and discover there’s far more than just fabulous Greek restaurants to entertain. Looking for uptown chic in a relatively downtown neighbourhood? Start with Bloor Street West between Yonge Street and Avenue Road which is lined with upscale stores like Canada’s premier luxury department store, Holt Renfrew, Chanel, Gucci and Louis Vuitton. A few steps north will take you to Yorkville, a former hippie hangout that is now one of the chicest neighbouroods in the city. Chinatown is a colourful place to be anytime of the year and actually one of six distinctive Chinatown’s in the city. Nearby is bohemian Kensington Market where you’ll find funky vintage shops crammed into old Victorian houses and a pedestrian neighbourhood where artists, musicians, students, fashionistas and shop keepers from seemingly every part of the world come together. The excitement goes from latté lounging to martini madness all in one day in Little Italy and summer sees The Beaches crammed with sun seekers, volleyballers and cyclists all out to enjoy the season.

• Cap off your busy day with dinner at the tallest structure in the world and experience a magnificent view of Toronto’s skyline. 360 Restaurant at the CN Tower offers fine dining at this must-see attraction.

Head underground to the PATH, a subterranean shopping concourse with close to 1,200 retail shops, cafés and restaurants that weaves its way for more than 27 km (16 miles) beneath Toronto’s downtown core connecting 48 office towers, six hotels and five subway stations.
• Toronto’s arts and culture scene is unlike any other. The city’s more than 100 cultures grant us a unique flair in art, theatre, architecture, music and everything in between. The Art Gallery of Ontario is home to the largest public collection of works by British sculptor Henry Moore and is currently in the midst of a redesign by Toronto born Frank Gehry. The Royal Ontario Museum will unveil it’s own unique redesign by architect Daniel Libeskind in summer 2007. Harbourfront Centre is open year-round and the place to be to see performances of dance, literature readings, and concerts by artists from around the world. The new Four Seasons Centre for the Performing Arts is Toronto’s brand new opera house and the Elgin Winter Garden Theatre brings historic charm to one of the world’s remaining double decker theatres. Classical music lovers with fall in love be enamoured with the Toronto Symphony Orchestra at Roy Thomson Hall.
Day 2 – Night
• When night falls, Toronto beckons with a nightlife that offers limitless possibilities. Visit your favourite neighbourhood and a local watering hole to suite your taste. From English style pubs to swanky lounges, you just may be tempted to stay all night. Then gather your troops and head to the Entertainment District where you’ll get lost in a sea of night crawlers in search of the perfect nightclub. If live music is your thing, Toronto is the place to be. Live music venues across the city (notably Queen Street West) showcase tomorrow’s rockers, rappers, torch singers and cabaret performers.

Customers will be able to go into any of the Salvatore Ferragamo stores participating in the program, look at the opportunities offered by Made to Order production and with the help of the sales staff create their own bag by studying samples and choosing a model, accessories, colour and type of leather. The order will then be sent to Florence and the bag, which will be made in Italy to stringent Salvatore Ferragamo craft standards, will be delivered to the customer’s store within six to twelve weeks, depending on the model.
The initiative provides an unprecedented choice within a range of 16 seasonal models, over 50 colours, gold or palladium accessories with beige suede insides. The key field of choice is the type of leather, comprising four exotic and luxurious skins: crocodile (matte or shiny), ostrich, polished lizard and python. Each bag will be given a metal plate, on the inside, on which the customer can have her name, or other words, engraved.
The program will operate through Salvatore Ferragamo stores in New York, Los Angeles, Tokyo, Osaka, Florence, Milan, Rome, Paris (Avenue Montaigne), Moscow and London (Old Bond Street and Harrod’s).
